Viscariello Hospitality Group Welcomes New Director of Culinary






Plymouth, Mass. (February 4, 2025) - 


Something fresh is cooking at the Viscariello Hospitality Group (VHG). This past summer, the group appointed a new Director of Culinary, Chef David Forbes. VHG remains family owned and operated, with 6 Mamma Mia's restaurants, Carmela's, and ThreeV. They are excited and thrilled to welcome a new chef to lead and mentor the team. 


VHG just celebrated 50 years in business. At any given moment, any of the owners can be found in the restaurants, when they're not busy running corporate operations. While the Viscariellos remain hands-on and actively involved owners, the restaurants will benefit from Chef David's strong background in professional hospitality. Before joining VHG he worked for 3 years as the Regional Chef for Broadway Hospitality Group, which includes 13 Tavern in the Square restaurants, among others. Prior to that, he served for over 2 decades as East Coast Regional Chef for Tavistock Restaurants, LLC, which includes iconic restaurants such as Abe & Louie's and Atlantic Fish, Co. 


After spending the latter half of 2024 finding his way around the 8 VHG kitchens – not to mention a seasonal food truck (ThreeV Sandbar), a catering operation (Mia's Catering) and a commissary (Plymouth) – Chef David is serving quality food with consistency at all 6 Mamma Mia's locations, ensuring a creative menu for a reasonable price at ThreeV, and capturing the original spirit of Carmela's in Kingston. 


"Carmela was the owners' grandmother. People should like they're eating at Nonna's." he says. For Chef David, that starts with Carmela's notorious fresh-made focaccia bread and a hot soup. "I love a simple thing like a homemade bowl of soup. It lets someone know there's a serious chef who made something amazing," he says. To achieve that, Chef David started a new soup program at Carmela's. He describes it as an exercise in creativity for the chefs, but it's more than that. Daily rotating soup specials are made from scratch with a variety of fresh-made stocks and trending flavors. 


At Mamma Mia's, Chef David has a hard time choosing his favorite dish. "It's the chicken parm. No, truthfully, it's the pizza. Our pizza is amazing," he says without pausing. While Chef David is steering the kitchen, he won't touch the famous Viscariello family recipes. The dough, sauce, and cheese blend have been the same for 50 years, and that uncompromising combo will never be altered. 


When asked what his favorite thing is about being a chef, the answer comes almost sheepishly. "That's easy. The look on someone's face when they have a great meal," he says. Come by one of the VHG restaurants and taste what Chef David has brought to the table.
